wrote 500 Low-Carb Recipes to counteract food monotony. The
book includes one-dish meals that combine protein and vegetables,
salads to make ahead and keep in the refrigerator, ethnic foods,
and comfort foods.
The chapter on “Condiments, Seasonings, and Sauces” was
interesting because I learned that many are “loaded with sugar, corn syrup,
cornstarch and flour.” I found many alternatives such
as Taco
Seasoning, Spicy Barbecue Sauce, and Cranberry Sauce using
Splenda®.
Some of my favorite recipes in this book are: Sugar-Free
Chocolate Mousse to Die For!, Srtawberry Cups, Italian Bean Bake, and Skillet
Chicken Florentine. Many of the recipes require utensils such
as bread machines, food processors, or slow cookers, so I was unable to
try many of the recipes in the chapter on “Breads, Muffins, Cereals
and Other Grainy Things.”
Her book has information on low-fat specialty foods
in grocery stores, and ingredients you need to know about. I learned that there
are several brands of low-carb bake mix on the market, “the
equivalent of Bisquick®,
although…they don’t have shortening added.”
People who want to lose weight need to be aware of
portion sizes. Carpender
cautions that “even low-carb treats, if eaten frequently,
will put weight on you.” Readers who like to vary their

Shirley recently moved to Mason City from northwestern
Minnesota to be near members who live in the area. She
